Stop Saying "I Can't..."

It's amazing how much a baby can change your life. When I had Liam I took the necessary time to heal and get into a rhythm with him, however, I made sure I did not let him slow me down. What I mean is I still lived my life - I just now had a baby to add into the equation. I still did laundry, cleaned the house, went to meetings, cooked dinner, went for walks with my dogs, etc. It amazes me how much people say they can't do once a baby comes into their lives.

For me, I have no choice but to do things even though I have a baby. I hate to be in my house alone for too long. That's why I'm involved with so much on post and after I had Liam I still stayed involved - he just came with me : ) Tim's schedule has him away from home a lot so if I'm hungry I'm cooking and if laundry needs to be done or the house has to be cleaned I do it - even with Liam.

I guess I'm tired of reading about all the things people can't do because of their babies so I wanted to be positive and show what I can do with a baby! Cooking became a passion of mine when Tim left for 7 months of training in 2009. I lived alone during that time and instead of coming home from work and being depressed I cooked : ) So I quickly learned my way around a kitchen and now I cook all our meals from scratch and try to invent as many recipes as I can. I also love to bake I just hate having something sweet in the house because I'm usually the only one who eats it : ) Below are some meals I've made lately and I'll be posting more as I have time. I made these meals without Tim's help or presence and with a baby who sometimes was awake, sometimes was fussy, and sometimes just hung out in the kitchen with me. If you ever want a recipe or two just let me know <3


Appetizer; Homemade crab dip served with sea salt crackers and Italian herb crackers. 


Dinner; Shrimp and Pesto Macaroni and Cheese


Breakfast Meeting; French toast casserole (basically one big piece of french toast!) 


Dinner; Lemon Pepper Chicken with Mushroom rice with peas and carrots
